I've looked around a little and cannot seem to find an answer. I noticed that a few of you guys wear a small 3 day pack or something similar on your plate carrier. How do these packs attach? The few that I've looked at don't seem to have molle on the area that contacts your back.
I'm a bit behind the curve when it comes to putting together a badass carrier and this seems to be an integral part. Thanks in advance.

You either jerry-rig it with zip ties/550 cord/d-rings, or you wear it over top your carrier.
Most of the time if you're not putting a MAP or other MOLLE pack on the back of your carrier, just wear it like you would any other backpack. Ideally when carrying a pack like that, you want it to be something you can dump if need be, either because you want to or because you need to because your ass is being pursued. A pack like that is something I would consider 3rd line kit, meaning it's the first to go in the event you have to start shedding gear to bug out faster.

I personally wouldn't run a 3 Day pack attached directly to a carrier. They're quite bulky, and the upside to having a pack is you can take it off. Personally, I wouldn't go much larger than a Yote. The MAP works just fine for everything I've needed. I haven't run a dedicated bag in a game, but fooling around with them it can be a bit awkward. If you get a standalone pack, I'd look in to getting one with a strap that goes across the chest. You might have to run your carrier a bit slick on the upper half, but it will keep it from slipping off.
