When it comes to adding scopes, I don't know where to start. I always see these red dot scopes everywhere and the mounts and stuff and I don't really know what too look for. I want to get one for my MP5 SD5 so if anyone could enlighten me, that would help quite a bit.

There are a few things that you need to decide.
First: What's your budget? We can find you something from $20 all they way up to $600+, so you'll need to narrow it down. What's the most you're willing to spend?
Next: Do you want magnification or faster target acquisition? so really, red dot or magnification? If you're going to leave your gun stock or lightly upgraded (not going to be a sniper), you'll probably want a red dot. They allow for a much wider field of view (what with both eyes open and all) and faster target acquisition. There is no eye reliefe to worry about, so your mask won't have to worry about how far away your eye is from the reticle.
Do you want a tube or a reflex (this is assuming you want a red dot, if you want a magnification scope, this doesn't apply)? With a reflex sight, you get more "dot-searching." What that is, is when you look through a tube sight, the concentric circles help your eye line up so the dot will be in frame, so to speak. But with a reflex sight, you don't have the aid of the natural alignment of the tube. With the tube, however, some of your field of view is obstructed.
Without trying either, you'll just have to guess at what you'll like or find people with either.
Once you figure this out, search around on both airsoft retail sites and hunting equipment retail sites to find sights that you might like. Then search on Yahoo or google for review of various scopes/sights that you like.
There is also a wonderful section on choosing optics in the Newbie FAQ, which I just updated two days ago. DumboRAT it up from 7 pages to about 23. Search through that to find the section on optics and give it a read (If you have time, give the rest of it a read while you're at it).

You'll also need to decide what type of mount you want for whatever sight you choose. For the MP5 there are pretty much 2 types, low mounts that sit very close to the receiver and will most likely cosight your sight/scope with the iron sights, and riser mounts that raise the level of the sight above the iron sights so you have an unobstructed view. There are a variety of both types of mounts, and as Jeff mentioned you'll have to decide how much you want to spend and go from there.
