Yeah, I wasn't sure what exactly it was. It looks kind of like an RRV, but with most of the side panels cut off or removed. I mostly see them wearing RRVs while they still used Three Color Desert. I have also found that Eagle Industries makes an RRV in AOR1.

Helmets: TC2000, albeit a fair bit rarer now but work just fine for your given period. TC2001 Opscore Base Jump, Ballistic and I think Carbons were used at different points. Crye Airframe, but as CQBR said they're still fairly rare.
Vests: Eagle PC LBT 6094, MC, AOR1 or Khaki works. They've been using MC for awhile now, and there is at least one photo of MC and Khaki 6094. MBSS, Khaki primarily, slight chance of OD. I would stay away from OD though. Eagle RRV, Khaki. They do exist in AOR1, but I don't think I've ever seen a photo of one in use. I don't think I've seen a current gen one either, the only ones that I've seen are from the first runs of AOR1. (Side note, the one you linked Dallas is not from Eagle, but from a Korean company). Crye CPC, JPC
There are no doubt more, but those are the most common Plate Carries (not including not plate carrying chest rigs such as the 1961) fitting your given era. I don't think I've seen a Mayflower APC in use, but it's completely possible that I've overlooked that. Khaki stuff is still in use, so you don't have to shy away from that.
I believe the chest rig in the wiki photo is a model from DBT. Not positive on that, but it closely models some of their older offerings.

^Thanks Knife! This really helps a lot.^
I thought I've seen them use Coyote Brown, or is it just khaki and looks like CB because of the lighting?
The RRV and 6094 seem like the most commonly used rigs, so I'll probably get one of those.
On the RRV, the seller on ebay said it was EI. Oh well, it wasn't that big of a deal, since I'm going for a Multicam loadout.

CB has been used, but in small quantities. Stick to Khaki.

A pouch here or there isn't going to harm you, but a whole kit will.
