I picked up a Chest rig from someone a while ago, but never really tried it on. When I did, I realized it was too big. Although I managed to get the shoulders to fit well, the sides are still too wide.
Anything I can do?

Most importantly, how big are you? How old are you? What kind of rig is it?
Most vests and rigs are made for medium sized grown men. If your not a medium size grown man, you shouldn't expect your vest/rig to fit perfectly.
Try layering some clothing underneath it. Other than that there isn't much you CAN do.
