A couple of months ago I upgraded from my stock 8.4v 1200 MaH battery to an Intellect 9.6v 1600 MaH battery, and I was just wondering what all the benefits of a nicer battery are exactly?

An intellect will probably hold a charge better than a stock battery. Also this 9.6 will give you greater ROF and will last longer since it has more MAH

Your Rate of Fire (ROF) will scale with battery voltage, since high voltage = higher potential across the motor (short version). Also, increasing your mAH will increase the amount of time your battery can supply current, thus increasing how long it will last. Stock batteries tend to be finnicky off the shelf pieces of garbage in my experience, so getting a battery from a reputable company/person where you know everything is attached properly with higher grade materials means that you will have less "loss" and more throughput, probably helping you out even more.
Also, I would recommend deans connectors on your leads, because the tamiyas aren't all that great, they can become loose with the wear and tear we put, and you can start having misfires, etc due to loose wires and bad connections. The deans are a bit more robust.
One more thing is that, if you upgrade your gun heavily, a 7.2 V will porbably have lots of trouble pulling back that spring, where as an 8.4 V might be taxed but manage just fine, and a 9.6 V will probably get the job done.
