So I recently purchased a CB MOLLE Interceptor, and I'm now buying pouches for it. I'll be using a P90 or M4 with this (I'll just swap out the pouches) so i purchased those pouches, and a admin pouch (both CB of course) I am clueless as to what else I will need though. Seems like everyone else has a plethora of bags, sacks, pouches, holders, etc and I want to ensure that i'm not missing out on anything. Therefore I would like to put together a list of standard pouches and accessories for a MOLLE vest. So far I have:
M4 Pouches P90 Pouches Admin Pouch Magazine dump pouch? Medic Pouch? Hydration bag?
Anything else guys? Thanks.

I use a dump pouch that hangs from my belt (I found the style that fits anywhere on a vest is too cumbersome to use quickly), and I like to keep some kind of utility pouch on me to carry any small stuff like a kill rag, small tools, objective props and the like. I like to keep hydrated, so I keep a bladder in a MAP on my back. Otherwise, it's just mag pouches and maybe an admin pouch if I think I might have to carry a map or just haven't taken it off from the last time I thought I might have needed to carry a map.
You don't need a lot of shit on your vest. Mostly just ammo and a hydration solution in the heat. A dump pouch is good if you care about fast reloads. If not, then don't bother. A small pouch is good if you like to carry little extras with you. If not, then don't bother. And even if you do, a pocket can do just as well if you don't have it covered with a drop leg holster/panel. The less shit you carry, the happier you'll be running around all day.
Note: None of the above advice applies if you're putting together an impression.

Knief has it right. Start by deciding what you need to carry, then figure out how best to carry it.
That said, I'm a gear whore, so my loadout is roughly a radio pouch on my left upper chest, admin pouch with compass and multitool on my right upper chest, medic pouch on my far right lower chest, M4 pouches all across my lower center chest, and a cargo pouch for snacks and batteries on my left lower chest. I have a hydration pouch on my back. On my battle belt, on the right rear I carry a collapsible dump pouch for scenarios where I may need to grab extra stuff, my holster on the right side, a flashlight front right, pistol mags front left, and a dump pouch on my left side.

I'm looking at getting a Hydration pack that would attach to my MOLLE Interceptor vest, any suggestions? Not really sure what to go for :/

Get a $20 Condor hydration pack. It's small, lightweight, comes with a bladder, has MOLLE on it, and is only $20.
Sure there are better ones out there, but for $20, it's a good buy.

I'm having trouble finding a coyote brown condor Hydro pack, they all seem to be tan.

They are all tan. Condor does not make CB gear. But, one good way to remedy that dilemma is to just spray paint it CB. I plan on doing that to my Condor tac vest at some point.

Do not neglect cleaning these bladders. You will not only taste plastic, you will taste nasty nasty crap growing. For starting out and not going with impressions get the basics. Magazine pouches, admin pouch if you want space for morale patches, Hydration kits are a MUST if you are anywhere with high heat. The rest you can fill in what you NEED that fits your play or what you want to carry. A medic pouch isn't really necessary but if you are an idiot like I am who falls into badger holes instead of getting cuts etc... don't bother.

Trust is right. On a side note, I haven't cleaned my Condor bladder since Operation Island Thunder on May 21st... I haven't used it since then, but now I wonder if there's anything growing in it!

As long as you don't put anything besides water in it and its sealed it will be fine. The water may be "stale" but its fine and nothing should be "growing."

Thats a good idea to paint it, but won't it look a little, off? Paint won't look the same as a factory color. If you're chasing the tactical fashion plate look, it can't help you. If you just want to darken something up, it works fine.

Check out either Pantac or FLYYE. Both have a full line of pouches in CB. I like Airsoftsmith for all of my Pantac gear needs, and Ehobbyasia has a ton of FLYYE stuff.
